When Head Start students tried black-eyed peas for a Try Day event, they enjoyed this salsa!

Ingredients
1 15-oz can black-eyed peas, drained
1/3 cup diced tomato
1/4 cup diced red pepper
1/4 cup diced green pepper
2 T diced red onion
1 1/2 tsp. lemon juice
1 T Balsamic vinegar
2 T olive oil
1 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
2 T chopped fresh basil leaves
Procedure
- Drain and rinse black eyed peas.
- Dice onions, peppers, tomatoes.
- Mix vegetables and beans together.
- In a separate bowl, whisk together vinegar, lemon juice, olive oil, oregano, salt, pepper and garlic.
- Pour dressing over beans and vegetables and toss.
- Cover and refrigerate overnight.
- Prior to serving, toss in the basil.
