Ingredients
1 T olive oil
2 cloves garlic, minced
1/2 red onion, finely diced
1 jalapeno pepper, finely diced
1/4 tsp. salt
1 cup quinoa, rinsed and drained
1 1/2 cups low-sodium chicken broth
1 cup corn
1 mango
1 avocado
1 1/2 T lime juice
2 T fresh cilantro
Procedure
- Heat olive oil in a saucepan over medium heat.
- Cook and stir minced garlic until fragrant, about one minute.
- Add onion, pepper and salt. Cook and stir until tender, 5 to 10 minutes.
- Add quinoa and cook until slightly browned, 1 to 2 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low and simmer until broth is absorbed, 15 to 20 minutes.
- Optional – stir in diced mango, avocado, cilantro or corn.
- Serve immediately or chill and serve cold.
